The soup is not only delicious, but it’s also fairly easy to prepare. The depth of flavor will have you believe otherwise, but my method streamlines the cooking process, making it simple and unlocking the key to an uncomplicated dish.

So, here’s the thing. I’m not a fan of tomato soup. There, I said it. It’s odd, since I absolutely love soup. I love creamy soups; I love consommé soups; I love veggie soups; I love…. you get the idea. Tomato soup, not so much. BUT my family likes tomato soup. Then one day I get a roasted tomato, Boursin, basil soup video through my feed, and, and… it got me thinking. Hmmm, I might like that.

I didn’t save the video, but it stuck in my head. So then I searched for the recipe and realized it’s a whole thing. Anyway I read a bunch of recipes and different methods and researched the viral phenomenon. . The recipes are all slightly different, but at the same time, similar. So based on everything I read, I created my own recipe and here we are.

The main trick to my roasted tomato, Boursin, and basil soup recipe is to use one pot throughout all the different steps. A dutch oven is your best friend here. For those not familiar, a Dutch oven is not an oven per se, but rather a pot. It’s a casserole pan, which can go from stove top to oven and vise versa. Another key element to the recipe is an immersion blender. I highly recommend one for any kitchen.

Cooking Pro Tip: The fresher the ingredients are, the better the end result of any dish.   

  • 2 lbs. vine tomatoes
  • 5.3 oz. Garlic & Herbs Boursin cheese
  • 1 cup fresh basil
  • 1 sweet onion
  • 6 cloves garlic
  • 3 tablespoon extra virgin olive oil
  • 1 tsp cayenne pepper
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 Tablespoon balsamic vinegar
  • S&P to taste

  • Dutch Oven
  • Immersion Blender

Cooking Pro Tip: Always read a recipe all the way through before starting. Then re-read the recipe and assemble all your ingredients so you are fully prepared, knowing all the things you need (ingredients and tools included).

  • Read entire recipe and assemble all your ingredients and tools
  • Preheat oven to 425 degrees
  • Wash and quarter tomatoes
  • Cut onion into 8 wedges
  • Place Boursin cheese in middle of dutch oven and surround with cut tomatoes and onion, basil, garlic, cayenne pepper and drizzle olive oil over everything drenching thoroughly
  • Add S&P to taste on top
  • Roast for 30 minutes

  • Remove pot from oven and allow to rest for ten minutes to cool down
  • Once cooled a bit, use immersion blender to puree all ingredients
  • Continue to emulsify with immersion blender until you reach a silky, creamy consistency (be patient)
  • Put pot back on stove over low heat
  • Add broth, heavy cream and balsamic vinegar to pot
  • Increase heat to medium and bring to a boil
  • Test flavor and adjust seasonings to taste

So here’s the thing. All the recipes I read called for roasting the tomatoes, etc. in backing dishes or the such, and then transferring to a blender or food processor once roasted, to fully emulsify ingredients into a soup consistency. From there, you put mixture into a pan to finish soup on the stove top. I don’t know about you, but my brain immediately went to… that’s a lot of stuff to clean up! Holy mess Batman!

First, I decided to use the dutch oven to keep it to one pot and not requiring a baking dish. Then I used my trusty immersion blender to use the same pot not requiring another appliance to clean. Immersion blenders are a small handheld appliance, which is fairly easy to clean. I love to cook, but hate to clean up. This makes the entire process so much easier with the least mess. You can thank me later. And if you don’t own an immersion blender and love to play in the kitchen, I highly recommend one.

When you are using the immersion blender, be patient. It will take some time to emulsify and blend all the roasted ingredients into a silky smooth texture. Believe me when I say you’ll get there. Be patient, and when you think you’re done blending, blend a bit more for good measure. This assures you’ll have that smooth finish. The recipe calls for roasting 30 minutes, but assess how soft your vegetables are before you take them out of the oven to blend. You want them soft enough to emulsify fully.

The traditional food pairing with tomato soup is a yummy grilled cheese. This a traditional American meal: Grilled cheese with tomato soup. I did not grow up in the United States, so I really did not have a connection to this meal. I know many of my friends did. Maybe that’s why I don’t have the comfort food feels for tomato soup. This recipe has converted me. I really enjoy this particular tomato soup. The Boursin cheese for sure is the key.

Speaking of the Boursin cheese, I use the original garlic and fine herbs flavor for this recipe, but feel free to experiment with some of the other flavors if you prefer them. Other Boursin ingredients include shallots or truffles or lemon, which would all be great additions. Use what you and your family prefer to eat.

I hope you give my take of this viral recipe a whirl. If you like tomato soup, then I’m pretty sure you’ll love it. The soup makes for a great and quick weeknight dinner with a yummy, rich and crusty grilled cheese. For week nights, one pan dishes are the best, since they are easy to clean up. Nobody wants to clean a bunch of pans and appliances after a long day.
