Do you remember the Asian slaw recipe I shared recently? This chopped salad piggy backs on that recipe, creating a super fresh and crunchy salad dish. The same dressing, created by Miss Masterpiece, is used to dress this fresh Asian chopped salad, which creates the fabulous taste and depth of flavor.

This chopped salad uses a variety of vegetables, which can be easily adjusted based on preferences. Feel free to substitute with other vegetables you prefer. Also simply add or omit any ingredient if it doesn’t work for you and your family.
How To Make the Super Fresh Asian Chopped Salad
Dressing Ingredients:
- 1/2 Cup Low Sodium Soy Sauce
- 1 Tablespoon Kewpie Mayonnaise
- 1 Tablespoon Sriracha Hot Sauce
- 2 teaspoons Sesame Seed Oil
- 1 teaspoon Rice Vinegar
- 1-2 Garlic Cloves
- I teaspoon Toasted Sesame Seeds

Salad Ingredients
- 1/2 Green cabbage
- 1 Carrot
- 3 Scallions
- 1 Persian Cucumber
- 1 Cup Edamame
- 1 Cup Baby Corn
- 1/2 Cup Peanuts
- 1/2 Cup Chopped Cilantro
- 1/2 Cup Crispy Wonton Strips
- Sesame Seeds to Taste

Dressing Instructions
- Mince garlic cloves
- Combine all dressing ingredients and mix well until dressing is emulsified
- Set dressing aside and make salad



Salad Instructions
- Read entire recipe and assemble all your ingredients and tools
- Slice and chop cabbage to bite size pieces
- Fill salad bowl with cabbage and set aside

- Slice scallions using all white section and 2/3s of green section
- Peel carrot and use grater to shred carrot
- Slice Persian cucumber


- Add scallions, carrots and cucumbers on top of cabbage in salad bowl
- Add peanuts, edamame, baby corn and wonton strips to salad


- Roughly chop cilantro

- Add cilantro on top of salad ingredients, setting about 2 tablespoons aside for garnish
- Add dressing on top of salad and toss thoroughly

- Once salad and dressing are melded together add remaining cilantro and sesame seeds to taste on top as garnish

Tips & Recommendations for the Fresh Asian Chopped Salad
Kewpie mayo is a Japanese product which only uses egg yolks rather than the whole egg in its formula like the American counterpart. This provides a lush texture with a tangy, slightly sweet flavor profile. Kewpie mayo’s raised popularity has made it more accessible in the US, but in a pinch you can always substitute regular mayonnaise. I have also included an option in the shopping section below for your convenience.

Along side the salad I include bowls with more peanuts, wontons strips and sesame seeds for anybody to add on top of their salad if desired. This Asian chopped salad is a meal unto itself, but it would be a great side dish to seared ahi tuna or any fish really. Chicken or tofu can also be added to the salad as a protein option to make it a hearty meal option. It’s a fresh and healthy dish, which can be dressed up or down as desired.

This recipe yields the perfect side portion size for about 4-6 people. You can always double the recipe, using a whole head of cabbage, if you need to feed a bigger group. Also you can use purple cabbage or mix and match purple and green cabbage as well, which would be super pretty. We eat with our eyes first. I prefer to use fresh cabbage and slice it myself since it provides the freshest end result, but you can always use the packaged pre sliced cabbage for an even shorter prep time.
