Fresh Asian Chopped Salad Recipe

Crunchy fresh vegetables add great texture while the Asian influence adds fabulous flavors.

Equipment

  • 1 Grater
  • 1 Salad Bowl
  • 1 Cutting Board
  • 1 Chopping Knife

Ingredients

  • 1/2 head Green Cabbage
  • 1 ea Carrot
  • 3 ea Scallions
  • 1 ea Persian Cucumber
  • 1 cup Edamame
  • 1 cup Baby Corn
  • 1/2 cup Peanuts
  • 1/2 cup Chopped Cilantro
  • 1/2 cup Crispy Wonton Strips
  • Taste Sesame Seeds To Taste

Dressing

  • 1/2 cup Low Sodium Soy Sauce
  • 1 tbsp Kewpie Mayonnaise
  • 1 tbsp Sriracha Hot Sauce
  • 2 tsp Sesame Seed Oil
  • 1 tsp Rice Vinegar
  • 1-2 cloves Garlic
  • 1 tsp Toasted Sesame Seeds

Instructions

  • Read entire recipe and assemble all your ingredients and tools
  • Mince garlic cloves
  • Combine all dressing ingredients and mix well until dressing is emulsified
  • Set dressing aside and make salad
  • Slice and chop cabbage to bite size pieces
  • Fill salad bowl with cabbage and set aside
  • Slice scallions using all white section and 2/3s of green section
  • Peel carrot and use grater to shred carrot
  • Slice Persian Cucumber
  • Add scallions, carrots and cucumbers on top of cabbage in salad bowl
  • Add peanuts, edamame, baby corn and wonton strips to salad
  • Roughly chop cilantro
  • Add cilantro on top of salad ingredients, setting about 2 tablespoons aside for garnish
  • Add dressing on top of salad and toss thoroughly
  • Once salad and dressing are melded together add remaining cilantro and sesame seeds to taste on top as garnish
