Mr. Masterpiece is a big breakfast guy on the weekends. This dish came together based on a recipe I read in an Australian magazine (I know, random), and a dish he orders frequently at a local bistro. It’s such an easy recipe, which can be adapted in many ways depending on your culinary preferences.

  • 2 eggs
  • 3 slices of Black Forest Ham
  • 1/4 cup fresh spinach
  • 1 slice Havarti Cheese
  • 1 scallion
  • Cooking non-stick spray
  • S & P to taste

Cooking Pro Tip: The fresher the ingredients are, the better the end result of any dish.

Cooking Pro Tip: Always read a recipe all the way through before starting. Then re-read the recipe and assemble all your ingredients so you are fully prepared, knowing all the things you need (ingredients and tools included).

  • Read entire recipe and assemble all your ingredients and tools
  • Preheat oven to 350 degrees
  • Dice scallion and set aside
  • Spray baking casserole with nonstick spray
  • Layer bottom of casserole with ham slices, covering sides of dish
  • Crack both eggs into casserole on top of ham

  • Sprinkle spinach on top of eggs
  • Rip cheese slice into small pieces and sprinkle on top of baking dish
  • Add salt and pepper to taste
  • Add scallion on top, reserving some to add to finished dish
  • Bake for 20-25 minutes, depending on how you prefer your eggs cooked
  • Once done baking, remove from oven and sprinkle with remaining scallions
  • Bon Appetit! Enjoy your super easy & healthy baked eggs

This recipe is based on one individual baking casserole, which is one serving. You can make as many servings as necessary depending on how many people are eating. They can be put together assembly style, and all baked at the same time. It’s a great dish for your own family at home, as well as a perfect way to indulge guests.

Although the dish is presented as a breakfast option here, it also makes a quick and easy dinner option. The ingredients are not complicated and in half an hour you have a delicious hot dinner on the table.

Black Forest ham is the choice of meat here, but you can use any type of ham as well as other meat options like turkey. Meat can also be excluded altogether or a plant based alternative can also be used.

The weather in Northern California is very spring like at the moment, even though there are boughts of rain storms in between. Ingredients

  • 2 each eggs

  1. I am so excited about this recipe, MaryJo. My Mom is having surgery next week so we’re all trying to help by setting up a meal train. I’m usually a disaster in the kitchen but we all love breakfast and my Dad especially loves ham and eggs so I’m excited to make this for him. He is going to be tickled pink!
