Read entire recipe and assemble all your ingredients and tools
Preheat oven to 350 degrees
Dice scallion and set aside
Spray baking casserole with nonstick spray
Layer bottom of casserole with ham slices, covering sides of dish
Crack both eggs into casserole on top of ham
Sprinkle spinach on top of eggs
Rip cheese slice into small pieces and sprinkle on top of baking dish
Add salt and pepper to taste
Add scallion on top, reserving some to add to finished dish
Bake for 20-25 minutes, depending on how you prefer your eggs cooked
Once done baking, remove from oven and sprinkle with remaining scallions
