Although basil, rosemary and pomegranate seeds are used to decorate the Brie cheese wedges here for a Christmas tree feel with greenery and ornaments.   • Fresh Assorted Herbs (I used Basil & Rosemary)
  • Pomegranate Seeds
  • 8 Thin Pretzel Sticks
  • Honey

  • Mince fresh herbs finely
  • Mix herbs and pomegranate seeds in shallow bowl and set aside
  • Slice Brie round in half horizontally
  • Slice Brie in half, quarters and eighths vertically creating 16 wedges
  • Snap pretzel sticks in half, creating 16 pieces
  • Insert broken end of pretzel stick into end of brie wedge creating a tree trunk
  • Dip and press soft side of brie wedge into herb & pomegranate seed mixture, adhering garnishments to wedge

  • Arrange decorated mini brie trees on serving platter
  • Drizzle Christmas tree wedges with honey

Easy

These are not only super easy to assemble but also easy to eat. The pretzel stick trunk makes the Christmas tree cheese bites easy to pick up and enjoy. Finger foods are favorites for mix and mingle events when everyone is juggling a beverage and cocktail napkin and appetizer plate…. so easy is always welcome.

Garnishments

Make it your own. The cheese wedges can be enhanced with herbs, dried fruit, seasonings, nuts and so much more. The key is to mix flavors and textures. Use sweet and savory selections plus add crunch to the smooth cheese. There is no right or wrong, simply use flavors your family and friends prefer. Also use your fingers to press garnishments onto cheese to secure if necessary.

Yields

The 8oz brie round yields 16 servings. You can use more than one Brie cheese round if you want more servings or you can simply only use half the cheese wheel if you want less. Another alternative is to use Laughing Cow wedges, which simply need to be unwrapped and there’s not cutting involved. Keep in mind the flavor profile is very different than brie, and it’s also a softer texture.

Serving

Allow cheese to reach room temperature when served to your guests. You can make ahead and refrigerate, but take out about 15 minutes before serving to allow cheese to soften a bit. Serving on a flat surface like a large patter or board is best. Serve the mini Christmas tree cheese wedges with crusty bread and more pretzel sticks to accompany the silky cheese.
