When I created the flower crudités appetizer platter I wanted to use a different dip for each flower center. I knew I wanted hummus, which I only use store bought since I find it’s one of those recipes where homemade doesn’t make a difference.

Then Ms. M requested tzatziki, and who can refuse baby girl? This left a 3rd option open, and I recommended ranch dip. Once again Ms. M said that didn’t really coordinate with the Mediterranean flavors. She was absolutely right. After brainstorming, I decided on a white bean dip, which I love. I made it zesty since I knew my family would appreciate the zing. And here we are.

  • 1 15.5-oz can Canellini Beans
  • 1 Lemon
  • 3 Garlic Cloves
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 tsp Cayenne Pepper
  • S&P to taste

  • Drain can of cannellini beans, reserving some of the liquid
  • Place beans, garlic pieces, lemon zest, juice of lemon, oil, salt and pepper in food processor

  • Once all the ingredients come together add some bean liquid if more moisture is needed (you want a creamy consistency)

  • Taste and adjust S&P
  • Add cayenne pepper
  • Blend until everything is incorporated and creamy

Like I mentioned above, I added the cayenne pepper to make it zesty since my family likes things spicy. Me, not so much, but I’m willing to take one for the team. If you are like me and don’t need the spice you can skip this ingredient. Make sure to taste the dip when you are done blending it before removing from the processor to test the flavor. When I tested it, I knew the dip was too bland for my family, and decided to add the red pepper. Do what works for you and yours.

You want the texture to be creamy. The reserved bean liquid helps smooth out the dip if it’s too dense or chalky. Don’t forget to reserve some of the liquid when you drain the cannellini beans, but only add it after blending if necessary. Add a little bit at a time. You can keep adding more, but you can’t take it out if you add too much. The olive oil also helps with the consistency of the dip. You can also drizzle some of the extra virgin olive oil on top of the dip when you serve it.

I made this dip only using one can of beans since we only had six people for dinner. If you need more dip for a gathering simply double the recipe. The proportions of all the ingredients will remain the same. If you have left overs you can always refrigerate it, and it will remain fresh for a few days in the fridge.

This zesty white bean dip was perfect to finish off the flower crudités platter appetizer, but it’s also fabulous all on its own. It would be great with pita chips or pita bread. I would like to use it as a spread for a veggie sandwich. I think it would add great texture and flavor. I’ll let you know if I give it a try.
