Easy Roasted Pork Tenderloin

An easy, one pan roasted pork tenderloin dish with apples, potatoes and onions

Marinade Time 3 hours
Total Time 4 hours 15 minutes
Serving Size 4 people

Ingredients

  • 1.5 lb pork tenderloin
  • 1 ea apple granny smith
  • 3 ea medium Yukon potatoes
  • 8 ea cipollini onions
  • 2 ea scallion green onions

Marinade

  • 1/2 cup soy sauce
  • 1/4 cup balsamic vinegar
  • 2 T olive oil
  • 3 cloves garlic minced
  • 1 T Dijon mustard
  • 1 T brown sugar
  • 1 black pepper to taste

Instructions

  • Assemble all ingredients
  • Mix all marinade ingredients in gallon zip loc bag
  • Add pork tenderloin to marinade bag, seal & chill
  • After pork has marinaded long enough
  • Pre heat oven
  • Dice potatoes and apples into 1/2-in cubes
  • Peel onions
  • Add pork tenderloin to center of baking dish
  • Surround pork with potatoes, apples and onions
  • Pour marinade over entire baking dish
  • Roast for 45 minutes
  • Baste every 15 minutes
  • Let rest for 5 minutes before slicing pork
  • Place pork slices back in serving dish
  • Garnish with scallions
  • Serve immediately
