Cranberry Posset

A seasonal twist on the traditional Posset dessert with cranberry Autumnal flavorrs.

Equipment

  • 1 Sauce Pan
  • 8-10 Serving compote dishes

Ingredients

  • 4 cups heavy cream
  • 1/2 cup honey
  • 1/3 cup lemon juice
  • 1 tbsp lime juice
  • 1 cup cranberries
  • sugared cranberries for garnish
  • rosemary sprigs for garnish

Instructions

  • Read entire recipe and assemble all your ingredients and tools
  • Smash cranberries with a fork in a small bowl
  • Bring heavy cream and honey to a boil and simmer at a rolling boil for about 3 minutes; stir frequently ensuring the honey fully dissolves.
  • Take off stove and add citrus juices, mixing well; add smashed cranberries and let steep for 20 minutes.
  • Remove cranberries with a slotted spoon and divide evenly into serving dishes.
  • Chill in the refrigerator until set at least 2 hours
  • Garnish with sugared cranberries and rosemary sprigs.

Notes

Depending on serving dishes will yield 8 - 10 servings.
Chill for at least two hours and Posset can sit in refrigerator for up to 2 days.
